Jason, Landcover data derived from Landsat should be considered at best a 1:100k scale data set. If the data is from Landsat7 and generated from a resolution merged product it could be considered a 1:50k dataset.
If you are interested in finding existing data as opposed to creating your own, that is the best you will find covering the whole US. Some states may have better landcover derived from air photo's and cadastral maps.
