Use Manifold 5.00. See http://www.manifold.net/products/mfd50pro/mfd50pro_home.html for a screenshot using AVHRR imagery (the particular example has been processed with Manifold's band recombination tools into a false color image). Manifold has fabulous georeferencing capability, extensive image manipulation and even lets you transfer selections between vector layers and image layers. So, if you don't need the entire AVHRR image you could select, say, just a particular state and cookie-cut the AVHRR image into a smaller image that's cut out exactly to the state boundaries.

for examples of this "cookie cutting" technique. You could then save the smaller image as a GeoTIFF and use it in ArcView. Manifold is not free, but at $245 it does have the ability to read about 80 different vector, image, surface/DEM and database formats so you could use this technique to harvest data from lots of sources for use in ArcView.
