Fred Limp is the prolific reviewer of GIS software for GeoWorld. He covers many of these products in a review at http://www.geoplace.com/gw/2000/0500/0500re.asp . But you're right--most of the questions you ask are not answered there.
A thorough review of Idrisi32 which is still pretty much up to date is at http://www.directionsmag.com/features.asp?FeatureID=40 . It answers most of your questions, but for that product only.
Be aware that these products are by no means directly comparable. For instance, Idrisi32 has deep roots in raster GIS while Manifold grew out of a network GIS: although excellent products both, they will have very different strengths and weaknesses in different applications.
Leonardo, why don't you do the research and summarize it for us?
