It is a raster or grid based analysis system and is in wide spread usage within the US Land Grant system as well as daily use by many precision farming systems practioners. All versions include export to AgLeader 3000 Prescription Controllers. MapCalc also has direct cross integration to MapInfo 6.x+ as well as Golden Software's Surfer 7.0+. It is one of the major GIS systems out there and is supported by heaps of applications, many free, that will extend its analytical features. Notes for LABS and CAMPUS Licenses: License allows for temporary installation on student laptops. Professor is responsible for each student signing a rider agreeing to remove software upon completion of project or class. Licensees will be required to report the number of labs, classrooms, sites and/or campuses where the software is installed. Lab/Class license allows for additional deployment on an instructor's single machine for the purposes of development of the curriculum.
As for data collection you might also take a quick look at MapInfo's MapX Mobile platform for WinCE devices. It is a ActiveX OCX developement tool that students might have a keen interest in.
Installing MapInfo Professional and MapCalc you will have a very powerful GIS resource for teaching and academic problem solving.

After a brief absence from the list, I am back. As you may deduce from my signature below, I have taken on some new and exciting challenges, and it is for one of these challenges that I am seeking advice from the list.
As GIS Program Liaison with Ridgetown College, I am involved in curriculum development for a new, one year, GIS Post Diploma Certificate program. Our program will focus on Agriculture and on Municipal GIS, the former because of the college's long history and expertise with agriculture, the latter because of the strong relationship we have with the local government and their interest in this program.
At this very early stage, we are considering courses in programming (VB, Avenue), database management (Access, Oracle, and SQL), some overview type courses that will cover the likes of cartographic principles, precision farming, etc., an intro to remote sensing, spatial stats, etc. - all, of course, with respect to our dual focus. We also would like to offer a course in data acquisition that will deal with GPS, data loggers, on-screen digitizing, etc. In other words, we want to provide students with the essential tools they will need in either field.
The advice I seek from you is this:
1. What software should we be looking at and why? (Our list is still very short - only the ESRI and GeoMedia families are on it so far.) This is an invitation to both users and vendors to offer suggestions. I would also like to know what software to avoid - if you have had any bad experiences - e.g. tech support, bugs, pricing surprises, etc. If you are a software vendor, we are very interested in seeing what you have to offer so that we may consider all options.
2. Given our two areas of emphasis - can you suggest courses that would be useful for the students to have (i.e. if you are in one of these industries, what courses would you like to have had, or wish you could hire employees with?) ?
