Recreational grade combined with a good inexpensive GIS on a decent PC would be a good combination. Accuracy would be OK for your task with just about any unit. Other considerations like battery life may be more important.
There are also very simple GPS receivers that work with Windows CE. In a pinch you could do the whole task on the PDA. You can do capture of GIS point data and attribute data on a PDA running ArcPAD.
I'd recommend Manifold as the GIS as it is inexpensive and easy to use. Needs a real PC or laptop however, won't run on a PDA. Take the GPS into the field along with a notebook for notes and then return to the PC to upload the data and transcribe the attributes to the areas you capture. It should work with ArcPad as well - but you may need some special setup software for ArcPAD to do fancy data entry in the field.
