I haven't done this myself, but I'm fairly sure it can be done.
From memory, there's nothing obvious in ArcGIS Help about creating movies f=
rom ArcScene, however...
1. Searching for "arcscene" on the esri.com website returns a number of rel=
evant links, including:

cScene_J8859.pdf An ESRI document titled "Advanced Animation in ArcScene". =
The intro from this document states: "This document provides hints and exam=
ples for ArcScene(tm) software users to develop advanced animations, making=
use of functionality that is accessible from the graphical user interface =
but is not described extensively in the basic documentation. This document =
applies only to ArcScene 8.2 and later versions."
