I would start with a good text on cartography - It will include chapters = on projections, coordinate systems, etc. I'm away from my library, so I = won't reccomend anything in particular. To oversimplify, GIS is computer = cartography that is fused with a database management system. =20
For learning ArcInfo, there are several books that include tutorials. = ESRI has an online learning program ("campus") that has many courses that = cover the basics of geography, and their particular products. Their = courses are well done, and less expensive than classroom instruction. If = you are a person that can learn on-line (some people can't), they are = good.=20
