Matt,

I am at home so I am completely forgetting what the wording is.. but
create the legend in the layout first. Then make sure the legend is
selected and right click on the legend and select the option that says
something like 'convert to graphics?' or 'objects'?, (this is the wording
I am blanking on but try a couple of them) THEN the 'UNGROUP' option
should become available, you'll have to keep 'ungrouping' the objects in
the legend until you are able to select the text you want and then edit
the text in the edit box by clicking on it twice to enter a <CR>

You can the move them around and arrange the legend with the alignment and
distribute options.

Maybe there is an easier way, but this is what I do to edit a legend.
