Stephany,
I know the folks at Refractions Research are working hard at uDig (User-friendly Desktop Internet GIS), and a goal seems to be to make it fully functional on a Mac. I don't know exactly what the Mac status is at present, but the development is moving extremely quickly. I expect it will be a very useful tool when the final implementation is rolled out (March 31 according to the Refractions website). Certainly something to keep an eye on.
