Besides software specific books, the best "backbone GIS" books I used in school and that I have referred to many times since are:
Fundamentals of Geographic Information Systems by Michael N. DeMers Remote Sensing and Image Interpretation by Lillesand and Kiefer Elements of Cartography by Arthur H. Robinson, etal.
Although I used all 3 while in a community college and the DeMers book in 2 different GIS classes as an undergrad, they are also used in undergraduate and graduate level studies in at least several universities and colleges around the U.S. They can be a little dry, but well worth the reading.
