Jeremy:
the first thing I would like to say is that you shouldn't worry about the age thing. I am an old GIS fart at 60 years old, and am still going strong in the field of GIS Consulting - presently in the Middle East for the next 5 years.
Have you tried to contact any Consulting firms in Germany who specialize in things pertaining to GIS? You may want to try - this is how I got started years ago.
Regarding the Resume - the only thing I believe and practice about that is to never to put in what you cannot really do, or what you have not really done. It's that simple. Having said that, I think that the Resume should always be tailored slightly to try to fit the posting or job requirements. Think of what the Company/Agency wants from their advertisement. Call them up if you are really not clear about what they want - calling them for clarification is nearly always appreciated. Do research about the Company/Agency you are applying to (both to tailor the resume as well as for the interview process)... even go so far as to call up the Comapny and talk to someone who is already working in GIS there to get an idea of what they are like to work for and what they do.
