I have used ArcGIS 8 and 9 on both Pentium and AMD boxes and have found no appreciable difference in operation, even during heavy analysis.

One word of caution is worth mentioning here, though. Apparently there is an issue with ArcGIS installation, and running, on Windows XP Professional and SP2 with an AMD64 chip. In the Tech Article referenced below, ArcGIS products and certified with limitations by ESRI under XP Pro SP2 and an AMD64 chipset (among other processors).
