I find the easiest way to be:

-project the shapefile to the desired coordinate system in
arctoolbox
-open a new project in ArcMap and add the projected file
-use a script, such as the following, to populate two new
fields (automatically added) with the UTM coordinates

-view the coordinates in the attribute table or open the
.dbf file in Excel

As you can see from the replies there are a lot of methods
to accomplish the same task! Good luck.
