You have to be sure of the original datum that was used to
collect the lat/long coordinates. It was likely wgs84 but
you should make sure of this. You should first define the
projection of the original lat/long shapefile into
geographic wgs84. You should then project that shapefile
into "NAD_1983_StatePlane_Nevada_East_FIPS_2701_Feet"
(assuming there is a geographic transformation included in
ArcToolbox). You can then add the coordinates using a
script.

The resulting coordinates will be in whatever system and
units your data frame is in (Data Frame Properties -
Coordinate System tab and General tab) which would seem to
me to be your StatePlane coordinate system with Feet East
and Feet North.
