Thanks, all. I used Hawth's Tools
(http://www.spatialecology.com/htools/index.php) to make the line and
then labeled it the way the client wanted (with some of the z values
placed at certain points). Will also show her a version with some
from_z/to_z values indicated.
Also learned that ETGeoWizards (http://www.ian-ko.com/) has a Generate
command too, among many others, helpful since she'll be working only at
the ArcView licensing level.

Why not use the DBMS compnent of your GIS first and get the line data
into a form that ArcINFO can handle? Also, keep in mind that the id and
Z attributes are node attributes. They should not be associated with a
line (unless you make a new line_id and into two attributes from your Z
data, e.g. from_z and to_z).
