FYI - All of these commands(and working with tables in general) are much
easier to accomplish in Manifold GIS because you won't have to save your
table to a new shapefile, feature class, or dbf after every join. If these
are tasks you do often you could save yourself considerable time.

You can "flatten" joined fields, and you can change a fields data type all
within the native table.

As you can see from other responses the things you are trying to do in Arc
are only possible by creating new datasets or table fields.
