Hi Landon,
You can use ogr2ogr to do this. My suggestion is to download FWTools, which comes with ogr2ogr. After you install the program will be located in the bin folder of the installation directory, something like, C:Program FilesFWTools1.1.3in.
If all you want to do is convert a geodatabase to shapefile the syntax is,
ogr2ogr out_shp my_pgdb.mdb
The output is a new folder called 'out_shp' containing shapefiles for each corresponding feature class.

Do any of you guys know how to extract an ESRI Shapefile from an ESRI Personal Geodatabase with FOSS tools? I've got some data from the US Forest Service that appears only to be available as a Geodatabase.
