Many thanks to Jarold W. Holland-Hibbert, Dan Seidensticker, Bob Booth who helped me learn how to manage domains.
Here is an explanation and some tutorials:
Rixanne,
You should be able to add several domains, go to each one, and add code/value pairs to them, and click OK to have them all applied.

Saving multiple domains at once is possible and should not raise an error with out something being invalid with one of the entries (maybe an invalid character in one of the names?). Since it is possible to make a typo I would suggest the workflow of Applying after every new domain would be the best while you are creating new domains.
The dialog will not allow you to change the type of field a domain is pointing to because the only edits that are allowed to a domain once it has been created are changing the range or codedvalues.
To change this mistake you should delete the existing domain and recreate a new one with the correct field type. To delete a field you will want to select the small box to the left of the domains name (or codedvalue to delete a specific value). Then on your keyboard press delete and click apply in the dialog. I have attached an image of a domain select just before the delete button is pressed. Best regards Bob

I'm not sure about the first problem you are talking about, but to delete a domain go to: ArcToolBox > Data Management Tools > Domains > Delete Domain Dan

Q1) Are you sure you are hitting the APPLY button after you create EACH domain?

The basics haven't changed in 9.2.
Q2) Creating a domain is a one way street. If you get things wrong, you need to delete the domain, but before doing this, you may need to remove any associations between the domain and any attribute tables within the geodatadatabase.
